When stir-frying bamboo shoots, blanch them in boiling water for 5–10 minutes first, then cook with other ingredients. This method breaks down most oxalic acid through heat, reduces side effects, eliminates bitterness, and enhances flavor. Also, avoid eating bamboo shoots with seafood to prevent skin diseases.
