Boil sea chestnut and licorice with water to make tea; remove peel and seeds from tangerine, place in small pan, add 50g rock sugar, marinate for one day until flesh is fully soaked in sugar, then add sufficient water and simmer gently until syrup thickens, then stop heating. Press each tangerine segment into a cake, mix with 50g rock sugar, stir well, spread on tray, dry in ventilated shade, store in jar.
